Equal parts brilliance and common sense, the Chemex uses immersion and gravity to brew the perfect cup. Invented in 1941 by Peter J. Schlumbohm, a German chemist in the USA.
This is a beautifully designed filter brewer – it is even on permanent display at the Museum of Modern Art (MOMA) in New York. Combining the highest quality borosilicate glass with a wooden collar results in an effective and minimalist design.

A simpler pourover method with less hassle. You can use a gooseneck kettle or with some care just use your normal kettle. Using a Chemex is a wonderful ritual for making a great cup that needs just a lit bit of patience and some basic technique.

The standard paper filters for the Chemex are 20-30% thicker than other common brands. These filter out more of the oils and pretty much all of the suspended solids from your cup. When oils get removed by means of an effective paper filter, the acids are accentuated, and these are critical in adding structure to the cup, which essentially makes it feel more alive. The Chemex really shines with bright, fruity and floral coffees, particularly some of the more unique Africans (Ethiopia, Kenya and others) or even truly rare and precious coffees like the best Panama or Ethiopia Geisha varietals.
